Being surrounded by white snow has been lovely, but I’ve noticed myself gravitating towards more colorful foods in response. Lots of red apples, opting for a near neon orange cauliflower, eating very non-local and out of season blackberries, and lots and lots of kale. These bright and deep colors are definitely putting a smile on my face, and hopefully putting a dent into all the holiday damage.
I’m feeling a bit left out of the juicing rage since I’m still on the fence about which juicer to purchase (any recommendations???) But I’ve seen some juice recipes which only require a blender and fine-mesh sieve, and decided to give one a go.
This super simple juice uses basic, inexpensive ingredients. It’s also a great use up for any extra kale I have leftover in the fridge.
The vibrant green color is pretty wild too. (kind of reminds me of someone from my childhood :P)
I’ve scaled back on the lemon, since I like it less tart and more sweet. But feel free to increase if you’d like a more acidic kick to your juice.
Green Apple Juice – slightly adapted from weelicious.com
- 2 whole apples, chopped
- 2 cups packed chopped kale
- 3 cups water
- juice of 1/2 lemon
- honey, to taste
Place all ingredients in a blender and puree until smooth. Strain through a fine mesh sieve into a large measuring cup and chill in fridge if desired. Pour into individual glasses and serve.
Yield – 4 cups (3 servings)
